Foodie Friday

Hi girls! Today I'm joining Michael at Designs by Gollum. I haven't done this in awhile. :)

You know when you are just minding your own business shopping at Target or the grocery store...and that wonderful smell comes to you? The smell of roasted chicken. Yes, I knew you would understand. This supper was inspired by Target's Southwest Roasted Chicken. Easy breezy and so delicious. :)

Ingredients: Crispy tostada, shredded chicken, refried beans, lettuce, tomatoes, cheese, and guacamole.

Happy Foodie Friday!

  1. I love using the roasted chickens for meals. I'm just not that good of a cook so my family is always happy to see one no matter how we use it! I like to use them in pasta dishes too.

  2. Morning Stacey! Even though it is 5 am I think this would be good for breakfast!lol This might be Friday nite dinner! Yum Your boys are ADORABLE!! It's sooo hard to let go! I love Vanessa Wms. but can't recall that song?? I'm sure I'd be sobbing too! I'm laughing at your little geranium; I have one little pink bloom on the one near my window and not sure if it makes me happy or sad!lol I still adore your backyard even with the leaf blockage!lol Painting a bathroom today (I need to get posting too!!lol) Have a great weekend - Sincerely Jeannette (This might help you - my neighbor's only child/boy just signed up to go into the military instead of school - she is heartbroken/frantic; so keep telling yourself going off to school is easier to live with!!!)Hugs!!

  7. Oh, my goodness, Stacey ... that looks delicious. I'm going to try that during the holidays. I think my family will love it.

You asked if our floors are stained concrete ... yes, they are, and we love them. They get lots of wear and tear (especially on the weekends when Avery Grace and her puppy are here!), but are so easy to take care of.

Best wishes to you and yours for a great weekend!

  12. Looks so yummy, Stacey. I buy at least one of those roasted chickens every week. We get alot of "milage" out of them. They make the most delicious chicken soup after the meaty pieces are gone. Thanks for another idea for roasted chicken.

  16. Oh I LOVE all Mexican food being that I'm half Mexican. My Mom is and my Dad is German.

Yummy looking recipe Stacey! I'm seriously not kidding I'm starving.
I need to go and eat something now. I haven't eaten much today and I don't want to blow my diet.

  19. Yumm that really sounds good. Thanks for your suggestion. I had been thinking the same thing myself that the slickness and shiny were not helping to warm it up. Thinking a nice pattern and definitely a different texture will get me there
