Harvest

Don't you just love it when friends share their harvest? Our friends Dan and Sharon shared a big box of home grown tomatoes and peppers with us this week. I've already sliced and diced the tomatoes into quart size bags. They will be delicious in soups and stews this winter. I'm not real sure about all the peppers...any good ideas?

I hope you all have a great Labor Day weekend. We are visiting family. :) When we get back I plan to kick into serious fall fluffing. You girls who are already putting out your pumpkins are very inspiring.

Speaking of....it has been unseasonably cool here in Edmond, OK. The 80ish degree weather fools us into thinking that it should be this way. To keep it in perspective, they reminded us on the news last night that in 2000 it was 108 degrees on September 3rd. Now that was a record of another kind! Did I mention that the 80s are heavenly?!

  7. Those tomatoes and peppers look so good. My friend takes the peppers and cuts them longwise. She removes the seeds and stuffs them with cream cheese. She then freezes them. Her husband cooks them on the grill. She has also put a little smokie sausage in the cream cheese. She says her family loves them.

It is so nice here. I am just doing a little more painting and then resting up. Enjoy your holiday. I am trying to hold off on the decorating for fall until a little closer to the equinox.

  14. You can put the peppers in zip lock bags...whole and freeze them for use this winter. You can also can them whole with vinegar and they will be great. The freezing is the easiest and I think you will be pleased with the results! Have a great weekend!

  15. HI Stacey,
I was going to say freeze those peppers for use this winter in soups and omelets but I see someone mentioned that already. The cream cheese recipe sounds delish!

Hope you have a wonderful weekend!

  16. Don't deep fry too much, but those peppers stuffed with other veggies, and we use fish, rolled in flower are delish for summer fun. Once in a while deep fried is not too bad.

  22. Hey Stacey, those veggies looked great and I would stuff those little peppers with cheese, wrap a piece of bacon around them and either bake them or BBQ them... YUMO! It is cool here in Arkansas too. I sure do hope it doesn't get warm again.

This morning our weather is definitely Fall like. Sitting out on my porch with my coffee, reminded me once again, of why I like this season. I am like you, anxious to get out my Fall decorations.
