Delicious Low Fat Salad with Grilled Fajita Chicken on Rotation



We are trying to lose a few pounds here. Can you relate? Losing weight can be so hard even though you instantly feel better when you begin to eat in a more healthy way. 

I love this salad combination that I'm sharing today because it is filled with bold flavors and it's so good I can decline my very favorite Hidden Valley Ranch dressing. 



What's in this? 

Crispy chopped romaine lettuce, diced tomatoes, diced purple onions, diced red bell pepper, diced yellow bell pepper, rinsed canned black beans, diced black olives, and grilled fajita chicken. We topped our salads with mild salsa rather than a fattening salad dressing.  Truth be told we are on Weight Watchers and as closely as I can tell this is almost free of points.

For our fajita seasoning we keep this homemade mix on hand. 

1/4 cup corn starch
2 Tbsp + 2 tsp chili powder
1 Tbsp + 1 tsp salt
1 Tbsp + 1 tsp paprika
2 tsp onion powder
2 tsp garlic powder
1 tsp cayenne pepper
2 tsp ground cumin

I marinated the chicken in a Ziplock bag with the seasoning mix, some vinegar, and just a tiny bit of olive oil. Grill just before serving or serve cold.

This is so delicious I would eat it even when not trying to lose a few pounds. How about you? Do you have a favorite super low fat dinner idea? I'd love to know your great ideas!

This looks like something I would enjoy for lunch. We eat lean meats, grilled with stir fry or steamed fresh veggies for dinner. Low calorie and oh so good for you! Lots of vitamins! Hugs, Diane

This looks so good. I love salads and especially with grilled chicken. Never thought about using salsa instead of dressing. I found some Skinny Girl poppy seed dressing I really like. I love new salad recipes and this is a good one. I followed weight watchers 11 years ago so I am on the old system but I mentally calculate points everyday! My favorite salad for dinner is a mix of fresh veggies, maybe a piece of salmon and a light viniagarette....I pile it high on my plate and it is still very low points!
