Happy Monday Spring Lovers! I know many of you are still covered in snow but here in Texas we are soaking up spring like weather. It's beautiful! Spring makes me think of Carrot Cake and this old family favorite recipe never disappoints.

In our family we have always topped Carrot Cake with this unexpected citrus drizzle that is wonderful! The drizzle has fresh orange juice and orange zest in it. The flavor and moisture of this cake is beyond any other.

This looks delicious! The glaze sounds amazing too. I love citrus things anytime, but especially in the spring. I have a coconut cake in the oven as we speak. Wish I could say I'm using a fancy frosting, but I'm just frosting it with Cool Whip. :)

Be still my heart! This might make a fabulous Easter dessert. I love orange -- such a fresh clean flavor and it would be perfect with the carrot cake. I love it in the bundt pan, too.

Oh the citrus glaze sounds delicious! Funny story. For some reason, I do not like carrot cake. I like carrots and I like spice cake, which is similar, but no carrots in my cake thank you. But for like 5 years running in my 30's every birthday had some form of carrot cake presented to me. I ate them all and for sure know...no carrots. :)
