Make No Mistakes Chicken Salad

Chicken salad is one of the small pleasures in life.
Don't you think?

I used to order it at restaurants all the time but it wasn't something I made.
Chicken salad intimidated me. Isn't that silly?
A few years ago, I went to visit a friend and she shared her recipe with me.
The secret really is the best invention store rotisserie chicken.

Here's how I put this chicken salad together today:
chopped rotisserie chicken
chopped purple onion
one stalk of celery chopped 
a plop of mayonnaise
and Craisins

There's really no right or wrong way to make chicken salad.
That's the best thing of all!

You could also add grapes, nuts, carrots, bacon, or whatever you have in your fridge.

I love chicken salad too! And your recipe sounds and looks so yummy! Never thought of adding craisins! I will have to try that! ...did you change your header recently? It looks great! Did you make it yourself! I'd love some pointers if you did! I am technically challenged! LOL! :) ~Rhonda

I love chicken salad. I do make it at home, but have never used a rotisserie chicken. That is a genius idea!!! On to the grocery store...

You can make it a dozen different ways and it's always good! I made one last night using the rotisserie chicken, Caesar dressing, avocadoes, onions and peppers mixed and served on a bed of lettuce with some really good croutons. I am about to pack up a basket to take some to a sick friend for their dinner tonight. Along with fresh watermelon cubes and some blueberry muffins, this will make a nice summer meal.
It's silly what we let intimidate us. I do the same thing!

this looks foolproof, Stacey. I LOVE chicken salad, but I haven't made it either. It's my fave for lunch outings, and with a lower fat mayo it would be super healthy. pinning!!

The already-made chicken is about the same price as the raw ones in our store, unless one's on sale. I usually buy them for things like pot pies or chicken and biscuits.

I think I'm adding one to my grocery list now :)

This looks delish, Stacey. I make chicken salad all the time and even made it for my DIL's wedding shower for 40 people---served on croissants. I don't know if it's a regional thing or family tradition---we never use fruit, as in grapes or apples or whatever sweet. I usually bake and shred my chicken, add celery and a tiny bit if finely diced peppers and carrots and then mayo. Still, I have come to love green salads with cranberries, strawberries and nuts---that's a leap for me. So---I'll definitely try your recipe.

Another one to try

Church Recipe from the Friendship Luncheon

4 cups cubed cooked chicken
1 can diced water Chestnuts
1 lb seedless grapes halved
1 cup chopped celery
1 cup toasted slivered almonds *
1 can pineapple chunks drained*
1-Tbls Lemon juice
1 ½ cup mayo
¼ tsp Curry powder
1-Tbls Soy sauce
Dash of salt and pepper

Stir all ingredients together (*except almonds and pineapple)

Toast almonds in a frying pan over med heat -- Stir and WATCH !! (the almonds will burn easily).

Add pineapple and nuts just before serving.

Reserve a few nuts to sprinkle on top.

You won't believe this, but I was just telling my daughter yesterday that I wanted to find a good chicken salad recipe. When I make chicken salad my way, I seem to be the only one that enjoys it. Now, I'll try it your way and maybe there won't be so much left over... lol.

Yum, I love chicken salad! This recipe sounds delicious. I almost always get a rotisserie chicken to make mine. My favorite way to serve chicken salad? In a pn avocado half with a balsamic dressing drizzle. :-)
