Summer Salad

Happy June!!

We are trying to eat lighter this summer and if you don't mind
a little chopping it's easy.

What is prettier than a fresh summer tomato?
Nothing, that's what.

This salad has romaine, black olives, chopped red and yellow peppers, and green onions.

A little later we'll be adding the tomatoes and this grilled lemon chicken.

Aww, nothing like a good ripe tomato! Trying to eat lighter this summer too! We have a salad each evening and I always add chopped red and yellow peppers, green onions and avocado. I like to mix it up sometimes I add feta or blue cheese! Tonight, grilled chicken and maybe some roasted cauliflower!

Yummy! I can't believe you have fresh tomatoes already! I am being bad and making braised short ribs for dinner with mashed potatoes. Normally I do eat lighter in the summer, but it is a rainy day today.

Can I just say I love it when I refresh my Bloglovin' feed and a new post by you pops up? It's like a mini present. :) Gosh, those tomatoes look good! We just had fajitas the other night and I was saying how much better they would be with fresh, homegrown tomatoes. I'm taking it easy tonight and making breakfast for dinner. Scrambled eggs, bacon, and toast with jam. :) And I just might have a Mounds miniature candy for dessert. But I'll have to retrieve it from my hidden stash first. Gotta hide the good stuff, ya know. ;)

Stacey, what gorgeous pictures and the salad looks so delicious.

I decided to go on a gluten-free eating plan three months ago and starting eating a lot more salads. My husband teases me that I am going to turn into a head of lettuce...but I love salads. I don't feel so 'weighted down' after eating a yummy salad.

My kids always complain that there is never anything to eat at our house. There is lots of food, but no snacks. I tell them it just takes seconds to chop veggies for a great salad.

Love salads in the summer months especially with tomatoes. Your photo is making me hungry for one now. I am having something easy tonight, I made homemade split pea soup and we might have corned beef with swiss cheese/coleslaw and russian dressing on rye bread. Have a lovely week.

That looks delicious! We are having grilled pesto chicken and a huge salad for dinner too. (It's where I hide the kale my husband doesn't really like- the other salad greens and tomatoes hide them) we are trying to really pay attention to what we eat and fresh salads are a staple around our dinner table almost every night. :)

Nothing is more delicious than garden fresh summer salad! Colorful as well as healthy! The tomatoes look so yummy! I wonder how your bougainvillea plant doing this summer, Stacey? I brought mine inside for the winter and now its sitting outside in a pot, hopefully it will survive, keeping fingers crossed! Happy week! Hugs, Poppy

I love salads, especially at summer time. They are easy and fast to make and delicious...I love adding grilled chicken to my salads to make them a well balanced meal :-) Thanks for sharing Stacey.

Salads and grilled meats are staples in the summer. We spend a lot more time working in the yard and garden and spending a lot of prep and planning time is something we would rather not do. So we grill burgers or chicken, enough for several meals, and throw together a salad with fresh fruit, a little cheese and pecans and call it good. And it is!

This looks heavenly---I love the crunch of Romaine. We eat salads every evening, too, and sometimes I also have one for lunch so I have to be creative. Lately I've been adding beans for texture and making my own vinaigrettes. Yeah, summer!

love garden salads! We also include thinly sliced cucumber and craisins. :) Some sliced red onions are delicious, too. A sprinkling of grated cheese on top. And occasionally, try only fresh lemon as your dressing. ;)

Your salad looks mmmmm mmmmmmm good!!
Wish I could find a pretty tomato like that around here :^(
Supper will be corn
and tomorrow corn
and Monday, corn......yes Ma'am, we eat it at least once a day when we can get good fresh ears!! HEB is having a shrimp boil the we will have a few shrimp with our corn :^)
