I really hesitated to say cabbage in the soup title because
I know there are many cabbage-phobic people out there.
But here's the thing....this is so yummy!
I'm not a dietitian but this soup is bound to be good for you!
* In a little olive oil, I sauteed a chopped onion, two chopped stalks of celery,
and a some minced garlic until tender.
*Added two of the small boxes of vegetable broth and
simmered awhile so the good flavors would go together like Joanie and Chachi did a long time ago. Remember that? I miss Happy Days. :)
Then I added a can of diced tomatoes drained, a can of cannellini beans drained,
two chopped carrots, and most of a head of chopped cabbage.
There is also salt, pepper, and red pepper sprinkled in for good measure.
I remember eating cabbage soup years ago when on Weight Watchers
so I'm sure we will get skinny if we eat this.
Now y'all know that I've been to the doctor a few times here lately and she talks a lot about calcium and bone density.
We definitely want to have strong bones so after you have your cabbage soup,
I recommend a scoop of Rocky Road. A reasonable portion.
That's my plan!!
