A Good Meal

When Spencer came home to vote yesterday, I wanted to give him a yummy dinner. He's very tired of campus food. We had roast & gravy, rice, carrots, & peas. For dessert we had JoAnne's Chocolate Pie.



You know when you get married some of your recipes come from your own family and some come from your husbands? This was my husband's mom's recipe. Make sense?

Give it a try it's so good. (To be honest I've had 2 pieces today.)

JoAnne's Chocolate Pie

3 tablespoons cocoa
3 tablespoons flour
1 cup sugar

Mix these three dry ingredients in a small bowl. Then put into medium size pot or double boiler.

1 cup milk
3 egg yolks

Whisk milk & yolks together lightly. Add to dry ingredients in boiler. On medium to medium high heat cook the mixture stirring constantly. After mixture thickens add:

1 tablespoon butter
1 teaspoon vanilla
4 or 5 large marshmallows

When you add the butter, vanilla, & marshmallows the pudding will thin a little. Thickens again as it cools. Stir continuously - I use a non-melt spatula and never stop until finished.

Pour into cooled pie crust. Top with meringue or whipped cream.

ohhhh if it's chocolate I love it!!!! lol I hope you try the BBQ spaghetti and like it..I also use KC Masterpiece BBQ sauce in my bake beans..with ketchup and brown sugar and 2 lbs of hamburger meat with chopped onion and bell pepper...I brown the meat and onions and bell pepper and then add everything to a huge can of Bushs Baked beans....ohhhh it turns out fantastic and so thick and meaty...I just make up stuff thru the years! lol lol

Oh Stacey, I can't wait to try this chocolate pie recipe for Sunday dinner. I know you're glad your son got to come home for a weekday visit.

Oh, such temptation for a chocoholic! That looks delicious, but I'm afraid I'd eat the entire pie before anyone else got a slice. laurie
